In 2003 Chef Smith became ‘Professor Smith’, teaching Baking, Pastry, Confectionery Arts and Chocolate at his alma mater.

It was not long before his passion for educating competed with his passion for pastry arts.

Teaching came naturally to him, as an excellent communicator and extremely patient person.

Professor Smith strives to provide his students the same kind of education that he received, years before all his experience in the industry, teaching them the hows and the whys of the science and art of pastry.

Since his first teaching position, Smith has been an instructor at several other culinary schools, colleges and private institutions.

Between semesters his time is spent developing curriculum and lesson plans to build on the class before, always thinking of a better way to demonstrate techniques and inspire a productive learning environment.

Kingsborough Community College

At Kingsborough, Professor Smith teaches Chocolate and Sugar Confections, the most advanced pastry arts course in the Pastry Arts Associates Degree program.
Over a 6 week winter semester, his students learn sugar and chocolate techniques, including pastillage, poured sugar, casting sugar, pulled sugar and blown sugar to create showpieces. They are also taught how to properly temper chocolate and make sculptures and other confections.

New York City College of Technology (City Tech)

At City Tech, Professor Smith teaches advanced pastry arts courses students take in the Pastry Arts Bachelor’s Degree program. The curriculum rotates each year depending on a number of factors, courses that Anthony has previously taught include Deluxe Desserts, Specialty Cakes, Confectionery Arts, Candies & Bonbons and Artisanal Bread.

During the summer Chef Smith goes home to Trinidad where he has taught classes at The Academy of Baking & Pastry Arts, T&T.

Université Franco-Haïtienne du Cap-Haïtien

In 2015 he visited Haiti, where he taught baking and pastry at the UFCH, Université Franco-Haïtienne du Cap-Haïtien.
It was an intensive course with a full semester’s worth of material taught daily,
for three weeks.
