Creations by Pastry Chef Anthony Smith are amazing feats of creativity and usually made from just chocolate and sugar! Whether they are competition showpieces, confectioneries, plated desserts or chocolate sculptures, his creative process always produces a work of art.
As an Executive Chef, he plates beautiful desserts from seasonal ingredients that are sometimes savory, and always delicious. For holiday banquets or tea service buffets, he constructs chocolate showpieces that are a treat for the eyes. There are usually confectionery sweets and bon bons offered to accompany the showpiece, which is only eye candy on the holiday buffets at Thanksgiving, Christmas and Winter Holiday Season, and Easter.
For many years Chef Smith participated in pastry competitions. There, he made sugar and chocolate showpieces that defy gravity and are breathtaking to behold. For these creative sculptures, he earned multiple gold medals. Included among his awards was the title of Pastry Chef of the Year at the 2012 US Pastry Competition.
The creative process for all of these creations differs depending on what he is crafting. Yet they all begin with his imagination and inventive mind brainstorming ideas and dreaming up new and unique approaches to pastry arts. He is a wonderful fine artist, as seen in the canvases he paints in his down time, so he is able to easily sketch the structures that his mind envisions. Usually this process is a bit lengthy as he scraps several initial ideas and goes back to the drawing board repeatedly, before making a conclusive decision.
Another factor that plays a great role of influence in the direction he takes, is budget and cost of resources and supplies. With prices constantly fluctuating depending on seasons, markets and extenuating factors, this takes precedence as the most important consideration, even before design.
