FAQ: How do you get the dotted designs on the Bon Bon bottoms?

Chef Anthony’s Answer:
The ink that’s on it is actually cocoa butter so everything is natural, it’s just colored cocoa butter.
The technique is done with an acetate transfer sheet. They come pre-printed with many different designs, or you can make your own designs using clear simple acetate sheets without cocoa butter on it.
When we make our own transfer sheet designs, first liquefy your cocoa butter, then use a pastry brush and brush your design onto the acetate
Then spread tempered block chocolate down onto the acetate sheet, cut out your different shapes. and just set it in the refrigerator.
You can come up with really nice cool decorations for your pastries, your cakes with chocolate using a transfer sheet.
