In 2017-2019 Chef Smith was invited to participate at the Caribbean Tourist Organization’s Rum and Rhythm Benefit, a prestigious event held at Capitale, and billed as the “Ultimate Caribbean Epicurean Experience in New York City”.

During each event, he prepared specialty plated desserts with flavors from the Caribbean and an assortment of delicious bonbons for several hundred attendees, accompanied by a chocolate showpiece that matched the theme of the year.

For the event in 2017, he served Black Cake Ice Cream, Sliced Sponge Cake, Caramel Coconut Sauce, and Sorrel Cream.

In 2019, Anthony’s menu included White Chocolate Passion Fruit Mousse, Soursop and Coconut Brûlée, Mango and Passion Fruit Compote, and Chocolate Cake.
